Brasserie Cantillon
Founded in Brussels in 1900 by Paul Cantillon and Marie Troch, Cantillon is the last remaining traditional, family-owned lambic brewery in the city.
Guided today by fourth-generation brewer Jean-Pierre Van Roy, the brewery continues a legacy of spontaneous fermentation using open cooling vats and oak barrels.
Committed to authentic heritage, Cantillon transitioned exclusively to organic ingredients in 1999 preserving the living history of Belgian brewing while remaining true to its roots.
