Created in 1998 to celebrate the 20th anniversary of the Brussels Museum of Spontaneous Fermentation, Cantillon Iris is a unique, non-wheat wild ale that stands apart from traditional lambics.
While it relies on the same open coolships and wild Brussels microflora as classic lambic, Iris is brewed with 100% pale barley malt completely omitting unmalted wheat.
To balance its sharp spontaneous acidity, Cantillon uses a mix of fresh and aged hops, followed by two years of oak-barrel maturation and a generous cold-hopping (dry-hopping) phase before bottling.
The result is a complex, glowing amber ale that pairs signature wild funk with a distinct, floral hop character.
