Two year old lambics are macerated with whole red wine grapes (typically Merlot and Grenache Noir) before undergoing bottle re-fermentation.
Contact with the grape skins infuses the beer with a deep ruby hue, complex berry and dark fruit notes, and a gentle tannic structure that harmonises beautifully with Cantillon’s signature wild funk and lemon like acidity.
