Spirit of Birmingham First Single Malt Whiskey - Dó - a single Staffordshire oak cask - 325 (ish) bottles
Another historic milestone for this distillery, with the launch of Spirit of Birmingham's first single malt, a single cask.
This is a very special whiskey, for many reasons, not least the ingredients. This single malt is made from Organic Plumage Archer barley, a heritage variety grown just 43 miles from the distillery at Fir Farm; an organic, regenerative farm in the Cotswolds. The grain was traditionally floor-malted at Warminster Maltings.
Matured for 3 years & 2 months, in a hand coopered virgin Staffordshire oak cask. This special wood grew less than 40 miles from the distillery, in a sustainably managed woodland.
This is the first single malt ever produced in their hometown of Birmingham and they couldn't be prouder of what's in the bottle & what it represents. We can’t wait for you to try it!

Mash-bill - Traditionally floor malted heritage grain: Organic Plumage Archer Barley, grown at Fir Farm, in the Cotswolds.
Single Cask:
Cask name: Living - virgin Staffordshire oak from a sustainably managed forestry, hand coopered in Yorkshire.
Nose:
Toasted cereal and warm oak, honey roasted almonds, candyfloss apples & sticky toffee pudding.
Palate:
Rich mouthfeel, spiced walnuts, chocolate caramel apple, cherry drops, chewy.
Finish:
Long, gentle clove & apple, burnt orange zest. Rich honey spice, increases with more sips...
