Sotol is a distilled spirit from the Chihuahuan desert (northern Mexico, western Texas) sourced from the plants of the genus Dasylirion. Sotol is usually bright and slightly grassy; closer to tequila than mezcal. Unaged bottlings tend to carry the terroir of their growing environment, forest-grown sotol takes on flavours of pine, mint and eucalyptus, while desert-born sotols have more mezcal tasting notes, with earthy, mineral and leathery flavours coming through.
