Geuzestekerij De Cam

De Oude Cam is an old farm brewery of the former lords of Gooik. A community center was established here in the 1990s, including a folk café and a musical instrument museum. Willem Van Herreweghen, son of the poet Hubert and at that time production director at Palm, set up a Gueuze blending plant here in 1992 in the outbuildings. In 1997 the first locally docked gueuze was presented. Wort is purchased from Boon, Girardin and Lindemans lambic breweries. This undergoes a spontaneous fermentation in Gooik. The young lambic obtained in this way ripens further in barrels from Pilsner Urquell. Lambic of different ages is then assembled, after which the beer is fermented in the bottle for at least another year. The slow, traditional production method produces 100 hectoliters of Oude Geuze and Oude Kriek annually.
