Cascara – the fruit of the coffee berry - is a waste product of the coffee industry. We repurpose the cascara to create a rich, fruity zero-waste red vermouth with sustainability at its heart.
To create our vermouth, we blend a a fortified wine base with cascara for sweetness and wormwood extract for bitterness, all of which harmonise intoa sophisticated flavour. Spicy and fruity, with notes of cherry, strawberry, dark chocolate and rich flavours of red wine, figs and cinnamon on the finish.
Discarded Sweet Cascara Vermouth slots perfectly into vermouth-forward cocktails powerfully, adding depth of flavour and a distinct fruity bitterness to a mixology classic like a Negroni or Espresso Martini. Serve over ice for the perfect aperitif.
